Alors que les r\u00e9sultats des mesures des concentrations en nitrate NO<sub>3<\/sub><sup>&#8211;<\/sup>\u00a0et nitrite NO<sub>2<\/sub><sup>&#8211;<\/sup>\u00a0dans le jus de betterave donnent lieu \u00e0 des variations non n\u00e9gligeables quand, sur un m\u00eame lot, les mesures sont r\u00e9p\u00e9t\u00e9es plusieurs fois par jour ou d\u2019un jour \u00e0 l\u2019autre, les r\u00e9sultats des mesures de concentrations en nitrate NO<sub>3<\/sub><sup>&#8211;<\/sup>\u00a0et en nitrite NO<sub>2<\/sub><sup>&#8211;<\/sup>\u00a0de la poudre d\u2019\u00e9pinard sont, au contraire, remarquablement stables d\u2019un contr\u00f4le \u00e0 l\u2019autre.
